Gardner Ranch Products

     The Gardner Ranch has three main products, as seen on the quick links on the right side. They are Quarter Horses, Beef Cattle, and Meat Goats.

Beef Prices and other beef information

$3.00 per pound hot hanging weight (calf will be delivered to a local slaughter/harvest facility within a 30 mile radius of Gardner Ranch, of your choice).

We may be able to match you up with another customer that only wants 1/2 of a calf.

Slaughter weights are currently running from 350 to 525# per calf. Dry aging of 8+ days is recommended.

Expect a loss of 10 to 15% from hot hanging weight from dry aging. This is only loss of water. Dry aging improves flavor and tenderness.

Depending on your desired instructions on cutting and processing the meat 5 - 40% reduction in yield can be expected. This is due to removal of bone and trim, from the final packaged product. If the whole calf is processed into ground meat you can expect approximately 40% loss in bone and trim.

We recommend that you have the meat vacuum packed and quick frozen at the slaughter house. Generally, processing cost varies from 40 cents to $1.10 per pound, based on hot hanging weight, depending on the specific slaughter house used and the details of the processing order given by you.

This may sound like an enormous amount of loss from the original hot hanging weight! Typical off the shelf commodity beef is cut immediately after being killed and it is packaged in a plastic bag with added water. Typically, it is then shipped 1000 or more miles to the store or meat market. This is called wet aging. It is done out of necessity and to avoid the moisture loss. You may pay less per pound for it but it has a much higher water content. Also, we cannot compete in the price arena with commodity beef. Pricing is all based on scale and mass production. A local slaughter house may process 5 - 20 head a day as compared to a major kill plant that processes 5000 head a day!

Sample test on our ground meat have shown that the lean portion is 85% - 93%.

Our product comes from young calves that were raised, grazed, and processed locally.

Most commodity ground meat comes from old cull dairy and beef cows and bulls!

Our grass-fed beef calf product is locally produced, healthy, flavorful, and reasonably priced!

Please buy from Gardner Ranch or another local rancher that sells a wholesome, naturally raised, healthy, grass-fed product!
